Koay Teow Th'ng (Chinese: 粿条汤), fresh flat rice noodles are served in a clear soup broth, topped with fish balls, slices of pork, chicken, golden brown garlic bits and chopped scallions. A condiment of sliced fresh red chilies in soy-vinegar usually accompanies the dish.

For more than 30 years, Mr. Lay has been selling KOAY TEOW SOUP here in Carnavon Street and  his soup stock base is still done from whole chicken and specially homemade recipe with a variety of ingredients e.g. pig’s blood, lean pork, chicken, and freshly made fish balls. The Kway Teow Soup stall started by Mr Khoo’s grandfather had its beginning as old as the market for over 60 years. Now in Mr Khoo’s hands, clear, sweet soup stock is boiled from pork bones and homemade secret seasoning recipe which retains the original flavours of ingredients like pork, minced meat, fishballs and fish cakes. Choice of noodle include kway teow, mee tak mak, bee hoon and yellow noodles.
